Rennet Market Overview

Global Rennet Market is expected to grow at a CAGR of 5.49% during the forecast period 2024-2031

Rennet is a complex set of enzymes produced in the stomach of ruminant mammals. Rennet separates milk into solid curds and liquid whey used in cheese production. In young animals, rennet helps to coagulate milk, so it remains in the stomach longer. Rennin converts liquid milk to semisolid similar to cottage cheese. So that it stays in the stomach long enough for proteins to be digested properly; outside of the animal, rennet can be used to coagulate milk in commercial cheese processing. Rennet is the commercial form of rennin, and it is sold as clear amber to dark brown liquid preparation or a white-to-tan powder or paste. It is used to coagulate milk, create curds, and thicken cheese during manufacturing. Rennet is a set of enzymes produced from several sources, including animal, plant, microbial, and fermentation-derived, predominantly used as a coagulant in industrial cheese-making. Rennet has no nutritional value. It is free from calories, fat, protein, carbohydrate, minerals, and vitamins. Increasing demand for rennet in cheese preparation drives the market growth in the forecast period.

Rennet Market Dynamics

Increasing consumption of cheese across the world drives the market growth

Rennet is mostly used in the preparation of cheese worldwide. Total United States cheese production in 2020 was 13.25 billion pounds, up 2 percent from 2016. Wisconsin led the nation in cheese production in 2019 with 3.36 billion pounds. California continued to rank second, producing 2.5 billion pounds of cheese. Other top cheese-producing countries in the United States are Idaho, New Mexico, and New York. In international cheese production, only the European Union-27 continues to produce more cheese than the United States. An increase per person cheese consumption in the United States increases the demand for rennet. For instance, in 2020, per person's cheese consumption is 40.2 pounds 2020, which is greater than in 2019. Cheddar and mozzarella cheese are the most popular in the region due to their taste. Increasing consumption of cheese due to the versatility and adaptability to recipes, more available varieties, and more women employed outside the home. The consumer shift from at-home food preparation to purchases of partially or fully prepared foods has also benefited cheese sales. Cheese demand in India also increases due to India's young demography and growing urban middle class. Also, the increased visibility of different cheese styles and modern packaging, including slices and cubes, attracts consumer interest. Kenya-based company Raka Cheese has been producing cheese in the region and exporting it to Uganda, Tanzania, South Sudan, Rwanda, Ethiopia, and Eritrea.

Rennet Market Segmentation Analysis

The Microbial Rennet segment accounted for the highest share of the global rennet market

Some molds have enzymes that are similar to chymosin. These enzymes are extracted in the laboratory to make microbial rennet. Microbial rennet requires the use of bacteria and fungi. Before being a fermented product, enzymes came from bacteria and fungi. Increasing demand for microbial rennet due to its low-cost drives market growth. Some molds, such as Rhizomucor miehei, can produce proteolytic enzymes. These molds are produced in a fermenter and then concentrated and purified to avoid contamination with unpleasant byproducts of mold growth. Using microbial rennet makes the production of various types of cheese. It is also suitable for elaborating vegan cheese, provided no animal-based ingredients are used in its production. Microbial rennet is not derived from the animal, so it is popular among vegetarian consumers, which drives segment growth.

The cheese segment in the application held a significant market share in the forecast period. An increase in the application of rennet in the manufacturing of cheese drives segment growth. Rennet is an enzyme used to coagulate milk in cheese manufacturing. Rennet begins working at a temperature between 85-105F, even at higher temperatures. The application of rennet is very easy in cheese manufacturing; it takes less time to coagulate milk. It is available in liquid, powder, and paste forms.

Rennet Market Geographical Share

North America is the dominating region during the forecast period

North America is the dominant region in the forecast period. The United States and Canada are leading countries in the region in cheese consumption. Rennet is mostly used in cheese manufacturing. The United States produced over six million metric tons of cheese in 2021. Wisconsin was the leading cheese-producing state in the U.S., with a cheese quantity that amounted to about 3.39 billion pounds in 2020. The total soft cream cheese category brought sales amounting to 238 USD million in the United States in 2021. Shredded cheese was the best-selling form in the United States, accounting for over 6 USD billion in cheese sales in 2021. Americans consumed about 15.6 pounds of American cheese per capita and 15.64 pounds of Italian cheese per capita. According to a 2020 survey, Kraft Singles were the leading American cheese brand eaten most often in the United States. In 2021 about 203 million Americans consumed regular natural or imported cheese, while 3.7 million ate the fat-free/non-fat cheese type.

Europe occupied a significant market share in the forecast period. Increasing demand for cheese in the countries like Germany and the U.K. drives market growth. Approximately 9 million tons of cheese is consumed in European Union. Germany is the largest manufacturer of rennet in the region. Germany exports most of its rennet to the United States, Pakistan, and Sri Lanka. In 2021, over 2 million tons of cheese were consumed in Germany. Also, 96% of French people regularly eat cheese. These factors grow the rennet consumption in Europe.

Rennet Market Companies and Competitive Landscape

There are various established participants in the industry and local manufacturers; hence, the rennet market is fragmented. Some major key players are Chr. Hansen Holding A/S, Clarion Casein Ltd, Fonterra Co-Operative Group Limited, Iran Industrial Enzymes Company, Dupont, Bholebaba.co., Mayasan Biotech, AFFCO, Walcovit Inc., and Hebei Yoko Biotech Co. Ltd. Among others. Some key players follow merger and acquisition strategies to expand their business.
